Breakfast, for the most part, is easy. For our little Diva, I pop a bowl of oatmeal in the microwave and, 60 seconds later (plus two minutes in the freezer to cool it down), the morning meal is ready. The thing is, I worry about not giving her enough variety when it comes to breakfast.
Lately, I’ve begun looking at other options with the important requirements that they be A) relatively healthy, B) simple to make (from package to plate in less than three minutes), and C) something my two-and-a-half year old likes. One breakfast choice that fits both criteria is Aunt Jemima Lil’ Griddles pancakes.
The silver dollar-sized pancakes are found in the frozen breakfasts section of the grocery store and come in three flavors: regular mini pancakes, blueberry mini pancakes, and cinnamon French toast sticks. So how do they “stack up” when it comes to my three requirements?
A) HEALTHY – One of the biggest selling points of Aunt Jemima Lil’ Griddles is their “every batch made from scratch” process. The pancakes are made from real ingredients like eggs, milk and sugar. In other words, they take a lot of pride in using authentic ingredients, just like I might use if I were making pancakes myself (but actually had the time).
B) SIMPLE – Aunt Jemima frozen breakfast Lil’ Griddles are a big help for moms who want to serve her family a warm breakfast in the morning. Unlike making pancakes yourself – which can take waaaay more than three minutes – cooking five Lil’ Griddles only takes 30 seconds in the microwave. That’s right, from freezer to fork in less than a minute!
C) SOMETHING MY TWO-AND-A-HALF YEAR OLD LIKES – Breakfast is the most important meal of the day, which is why it’s important that I give our daughter something she’ll actually eat and enjoy. How did she like these pancakes? She devoured five of them and promptly asked for more. So I made her five more, and she at those too! (Yes, they’re small, but that’s still a lot of pancakes!)
Needless to say, the Lil’ Griddles will become a regular addition to our breakfast routine. The small size also makes it easier to control portion sizes and dish out two or three of them even as an afternoon snack.

There’s nothing like a simple breakfast. I go to the gym 5 mornings a week and without a simple solution, I feel rushed, my kids go hungry, and I’m frazzled. My kids LOVE pancakes too. Blueberry are their favorite. OH wait. I lie. They like chocolate chip too.
