If you love pineapple and grilled chicken, you’ll love this recipe! Just mix up the marinade, let it sit and then throw it on the grill. So easy and so delicious!
1 1/2 pounds of boneless, skinless chicken breasts, cut into 1″ chunks
1 20 oz can of pineapple chunks in juice
1 green bell peppers, cut into 1″ chunks
1 red bell pepper, cut into 1″ chunks
1 sweet onion, sliced
1 tbsp onion powder
1 tbsp garlic powder
2 tsp cilantro
2 tsp black pepper
Combine pineapple juice, onion powder, garlic powder, cilantro and pepper. Toss with chicken.Allow to marinate for 30 minutes.
Thread vegetables and chicken onto 4 (12-inch) skewers. Throw on the grill until center of the chicken is no longer pink.
TIP: Vegetables getting done much quicker than the meat? Place them on separate skewers (see below). Then you can pull the vegetables off while the meat finishes cooking.
Have leftovers? Toss it in a salad for dinner the next night.
