This week’s light summer recipe is marinated steak kebabs. If you love pineapple-soy marinades with a little kick, this recipe is for you. It’s a little sweet, a teensy bit spicy and a tad tangy. Delicious.
Serve it up with a baked potato and a fresh summer salad for a super easy and very filling meal.
- 1 20 oz can sliced pineapple
- 1 red bell pepper, cut into 1 inch pieces (green is fine too if you prefer it)
- 1 yellow bell pepper, cut into 1 inch pieces
- 1/2 sweet onion, cut into 1 inch pieces
- 1 cup pineapple juice (I use the juice that the pineapple was packed in)
- 2 tbsp soy sauce
- 1/4 tsp ginger
- 1/2 tbsp garlic powder
- 1/2 tsp crushed red pepper
- 1 lb sirloin steak, cut into cubes
Combine pineapple juice, soy sauce, ginger, garlic powder, and crushed red pepper flakes. Pour over steak and marinate for at least 30 minutes. Thread vegetables and streak onto skewers. Throw the skewers and pineapple slices on the grill until cooked to your liking.
TIP: Vegetables getting done much quicker than the meat? Place them on separate skewers (see below). Then you can pull the vegetables off while the meat finishes cooking.

Just made chicken kebobs last night, but never thought about doing the steak with the pineapple like that–great idea!
