Some of my favorite memories are of my family huddling up on Christmas Eve enjoying a cup of hot chocolate or sharing some fresh summer fruit in our sunny backyard. The best part of those treats were the loving memories I have with my family. A close second: the COOL WHIP Whipped Topping that made those memories that much sweeter.
COOL WHIP is one of those nostalgic brands that everyone knows and loves. So creamy and yummy and goes great on just about anything – fruit, pie, pudding, ice cream, JELL-O, or straight out of the container. My absolute favorite COOL WHIP dessert is my mom’s Strawberry Roll-up. Juicy strawberries, sweet angel food cake and creamy COOL WHIP make this a delicious dessert that’s sure to please the whole family.
So just for you guys, I headed home for a demonstration of the creation of this beautiful dessert. If you give it a try yourself, come back and share with us.
INGREDIENTS
1 Box Angel Food Cake Mix
2 Quarts of Fresh Strawberries, sliced (Frozen strawberries may be used, keep the juice!)
½ Cup of Sugar
2 Containers of COOL WHIP – For this recipe we’re using regular COOL WHIP, but feel free to try the different varieties, including extra creamy, lite, free, and sugar free. Keep an eye out for their seasonal flavors too!
DIRECTIONS
Preheat oven to 350 degrees.
Mix strawberries with ½ cup of sugar.
Mix cake according to instructions. Pour cake batter into cookie sheet, making sure you spread out the batter across the entire pan. Bake for 30 minutes until golden brown.
To remove cake from the pan, turn pan upside down over wax paper and gently scrape around the edges using a butter knife, allowing the cake to slowly lay onto the wax paper.
Roll up the cake. Be sure to have a little extra wax paper at the end so the cake doesn’t stick to itself. Place into the fridge to cool.
Once cool, unroll and spread 1 container of COOL WHIP over the cake.
Spoon 1/2 of the strawberries over COOL WHIP.
Roll the cake back up.
Spread 2nd container of COOL WHIP over the top and sides. Spoon remaining strawberries over the top. Enjoy!

Oh Yum! I absolutely love this! And so easy too, but it looks so delicious! Such a fun twist to a traditional strawberry Shortcake!
I like any recipe involving cool whip and strawberries; and this is one my kids can help create. We will definitely be trying this soon. So scrumptious looking!
