Vegetable Soup Recipe

In case some of you haven’t noticed, football season is finally underway. I love football as much, if not more, than my husband and the thing I like most about the start of the season is that it reminds me that the start of fall is just around the corner. The crisp breeze, the changing leaves, and a pot of soup on the stove. What’s not to love?

In honor of the approaching autumn, I whipped up a batch of vegetable soup this past weekend. This vegetable soup recipe is, like all the recipes I try to post, easy, cheap and healthy. Oh, and it’ll make your house smell incredible. You’ve been warned!

INGREDIENTS

  • 32 oz vegetable broth
  • 1 onion, diced
  • 1 large potato, cubed
  • 1 cup frozen carrots
  • 2 cups frozen corn
  • 2 cups frozen green beans
  • 1 can garbanzo beans
  • 1 can diced tomatoes
  • 3 cups vegetable juice like V8
  • 1/2 tbsp italian seasoning
  • salt and pepper to taste

DIRECTIONS

  • Cook onions until tender
  • Add potatoes and cook for 3-5 minutes
  • Add rest of ingredients
  • Bring to boil
  • Simmer 15-20 minutes

TIP: Remove vegetables and beans for a toddler who can’t eat soup yet.

  4. YUM. I’m going to have to try this recipe out. I tried to wing it once myself…I had too many vegetables and not enough liquid, so nothing cooked right. I also discovered I don’t like parsnip that day.
