The Christmas leftovers are finally gone (except for whatever is in that little Tupperware container in the crisper), which means I get to shift my attention to my favorite part of the New Year’s celebration – the appetizers!

Each year, my husband and I ring in the New Year by popping a few bottles of wine while we watch the ball drop on TV. But the star of the night isn’t the vino, it’s the food. Even though it’s just the two of us, my hubby and I go all out by cooking up at least four different snacks to munch on. This year, I’ll be making Bacon Ranch Jalapeño Poppers, with a little help from Kraft.

Since I’d never made jalapeño poppers before, I whipped up a batch yesterday as a test batch to make sure everything would go well on December 31. The peppers were stuffed with a variety of Kraft products which I purchased at Walmart (see my shopping trip on Google+), including Kraft shredded cheddar cheese, Kraft mayo, Kraft ranch dressing, and Shake ‘n Bake (yep, made by Kraft). So much cheesy goodness!

I also created a tasty southwestern dipping sauce, even though the poppers were delicious on their own! (See recipes at the bottom of this entry along with Kraft’s Holiday Family Table digital magazine filled with other tasty ideas.) They only take a few key ingredients.

Creating the cream cheese filling for the poppers was super easy. The only hard part was stopping my husband from eating all the bacon before I had a chance to mix it into the filling!

After stuffing each jalapeño half with filling and giving each one a quick dip in the Shake ‘n Bake topping, it was time to pop the poppers in the oven. Seriously folks, it’s that easy!

The final verdict on the jalapeño poppers was overwhelmingly positive. We’ll definitely be making them again tomorrow, along with several other snacks. As for the wine, I’ll probably pair these poppers with a biiiiig glass of wine. Cheers to 2014!

Bacon Ranch Jalapeño Poppers

Ingredients
  • 8 Jalapeños
  • 4 oz cream cheese
  • ½ cup shredded cheddar
  • 2 tbsp ranch dressing
  • 3 pieces of bacon, crumbled
  • 1 pckg Parmesan crusted Shake 'n Bake
  • ¼ tsp paprika
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • --
  • Southwestern Dipping Sauce
  • ½ cup mayonnaise
  • 2 tsp ketchup
  • 2 tbsp creamy horseradish dressing
  • ¼ tsp paprika
  • ¼ tsp salt
  • pinch of pepper
  • pinch of cayenne
Directions
  1. Preheat oven to 350
  2. Slice jalapeños in half, lengthwise
  3. Remove seeds and membranes (wear gloves if you have sensitive skin)
  4. Coat a baking sheet with cooking spray
  5. Place jalapeños cut side up on tray and bake for 10-15 minutes
  6. Mix cream cheese, shredded cheddar, ranch dressing, bacon, paprika and salt
  7. Stuff each jalapeño half with the cheese mixture
  8. Gently press the open side in the Shake 'n Bake to coat the cheese mixture
  9. Place jalapeño poppers on a baking sheet and cook for 15-20 minutes. During the last few minutes, turn the oven to broil to brown the topping

  12. Mix all ingredients until well combined
