5 Sunshine Sweet Corn Recipes that Will Change the Way You Eat Grilled Corn on the Cob Forever

Grilled Corn on the Cob RecipesPinItSpring is here, which means our grill has been seeing a lot more action. I’m definitely not complaining, after all, nothing beats a grilled burger, steak or chicken. Grilled salmon, however, belongs entirely to my husband!

While most of our grilling consists of meat, every now and then we like to throw some veggies over the open flame, too. We’ve been known to grill asparagus, peppers and onions, but my absolute favorite grilled vegetable is definitely corn on the cob. I’m talking about fresh corn, of course. Wrapped up in tin foil and tossed on the grill – I could make an entire meal out of it!

We decided to grill yesterday, and when I asked our two-year-old what she wanted for dinner – steak or hamburgers – she immediately chose steak. My husband beamed with pride (although either answer would have met his approval). To go with the steak, we picked up some fresh Sunshine Sweet Corn.

What’s nice about Sunshine Sweet Corn – available in the produce aisle of your grocery store – is that its grown by a collective of family farmers in Palm Beach County, Florida. It’s naturally bred for its sweet flavor, and reaches its peak season during April and May.

Of course, you can just add some salt, pepper and butter to your corn and wrap in it foil, but since this was our first fresh corn of the season, I decide to try out not one, not two, but FIVE different grilled sweet corn recipes. Here are the recipes we tried. Just a warning, though: Once you try any one of these recipes, you’ll never want to have “regular” buttered corn again!

 GARLIC SWEET CORN

Place 1 teaspoon butter, 1 teaspoon garlic powder, and 2 teaspoons minced garlic on top of each ear of corn. Season with salt and pepper. Tightly wrap the corn in foil and grill for 10 minutes, turn, and grill for 10 more minutes.

 PARMESAN SWEET CORN

Cover each ear of corn with a thin layer of mayonnaise. Sprinkle with freshly grated parmesan cheese, salt, and pepper. Wrap corn in foil and place on the grill for 10 minutes, turn, and grill for 10 more minutes.

BACON-WRAPPED CAJUN CORN

Sprinkle each ear of corn with Cajun seasoning, salt, and pepper, and wrap with 2 slices of bacon. Wrap the corn in foil and place on the grill for 10 minutes, turn, and grill for 10 more minutes.

CHILI LIME CORN

Mix lime juice, chili powder, salt, and pepper in a bowl. Grill corn for 3-4 minutes on each side, turning often and brushing the ears with the seasoned lime juice.

SWEET CINNAMON CORN

Cover each ear of corn with a thin layer of butter. Sprinkle sugar and cinnamon on each ear. Wrap in foil and place on the grill for 10 minutes, turn, and grill for 10 more minutes.

So which of these five recipes were our favorites? I was a big fan of the Sweet Cinnamon Corn and the Chili Lime Corn (grilling the corn without foil – something you can’t do with some of the other recipes – gives it a smokier flavor). My husband adored the Bacon-Wrapped Cajun Corn (although you could wrap an old shoe in bacon and he’d love it). And the most finicky judge – our two-year-old – really enjoyed the Parmesan Sweet Corn.

    Bacon wrapped cajun and sweet chili lime are now TOTALLY on my list! It’s a good thing we can have grilled foods most of the year living in Vegas! I see lots of corn coming our way now!
