Getting in Shape for Summer with Tyson Grilled & Ready: Grilled Chicken & Berry Salad

As I’ve mentioned in the past, one of my biggest struggles as a mom is planning a weekly menu that’s healthy, easy AND affordable. Finding meals that fit all three of those criteria is a challenge, but it’s one of those challenges I kind of enjoy. (Plus it gives me a good excuse to surf Pinterest for hours on end!)

That healthy goal is especially important during this time of the year, what I call “getting in shape for summer season” (a.k.a. spring). Of course, the other criteria – simplicity and affordability – are also still important. After all, with the weather getting nicer, I’d rather not be stuck in the kitchen doing a lot of cooking.

One product I discovered recently that delivers on all three of my spring meal requirements is Tyson Grilled & Ready Chicken. The pre-cooked chicken is found in the refrigerated or frozen foods section in several different varieties, including oven roasted chicken breast, chicken breast strips, southwestern chicken breast strips, teriyaki chicken thigh fillets, and sweet BBQ flavored chicken breast fillets.

I picked up a package of chicken breast strips with the goal of making Grilled Chicken & Berry Salad (recipe at bottom of this entry). To make it, all you need is some Tyson Grilled & Ready Chicken (take your pick of flavors), spring salad mix, shredded parmesan cheese, strawberries, and blackberries. You’ll also need some salad dressing. Feel free to choose whichever flavor you’d like, but I used a deliciously creamy poppy seed dressing. You can see my entire shopping experience on Google+.

The chicken is pre-cooked, which means all you really need to do is heat it up. It can be zapped in the microwave or, if you like your chicken with a little brown on it, it can be tossed in a pan with a little olive oil and sizzled on medium heat for a few minutes.

The chicken is the star of this salad, but a key supporting role belongs to the sliced strawberries and blackberries. The fruit pairs perfectly with the chicken and poppy seed dressing and can be purchased fresh or frozen.

The end result is a meal that’s easy to prepare and healthy! What’s especially nice about salad is that it can be modified to suit each person’s individual tastes. Do you like cheese? Add more cheese! Like ranch dressing instead of poppy seed? Get your ranch on! Prefer strawberries but not blackberries? Load up your salad with strawberries!

Grilled Chicken & Berry Salad
Ingredients
  • Tyson Grilled & Ready Chicken Breast Strips
  • Spring Mix Salad
  • Blackberries
  • Strawberries
  • Slivered Almonds
  • Shredded Parmesan Cheese
  • Poppy Seed Dressing
Directions
  1. Heat chicken according to instructions on the bag
  2. Place chicken over a bed of salad
  3. Top with a few blackberries and strawberries
  4. Add about 1 tbsp each of slivered almonds, Parmesan cheese and dressing
  5. Enjoy!
