Chicken Noodle Soup Recipe

Ingredients
  • ½ tbsp olive oil
  • 1 onion, diced
  • 4 stalks celery, diced
  • 2 (14.5 ounce) cans chicken broth
  • 2 (14.5 ounce) can vegetable broth
  • 1 pound cooked chicken breast, diced
  • 2 cups cups egg noodles
  • 2 cups frozen sliced carrots
  • ½ tsp dried parsley
  • ¼ tsp thyme
  • ½ tsp salt
  • ¼ tsp pepper
Directions
  1. Heat oil over medium heat
  2. Saute onions and celery until tender
  3. Add chicken broth, vegetable broth, chicken, frozen carrots, parsley, thyme, salt and pepper
  4. Bring to boil then reduce heat and simmer for 10 minutes
  5. Add noodles and simmer for 10 more minutes
