I’m a Weis Mother with a Wise Dinner Plan: Chicken Fajita Sandwiches

chicken fajita sandwichesPinItAs an avid couponer, I’ve been known to shop at four or five different grocery stores, but the one I do more than 90 percent of my shopping at is Weis Markets. Those of you live in the northeast are probably quite familiar with this gem.

There are plenty of reasons Weis is my go-to stop for groceries: Great deals, friendly staff, and their super-convenient online shopping program (Weis iShop) are just a few. You can also visit the Weis website and browse the circular for the weekly deals, print “at home couons,” or clip eCoupons, which makes hunting for deals really easy.  To clip eCoupons, you simply sign in and add your card number to your account. Then you click on the coupons you want, which will be added to your Weis Shoppers Club Card and applied at checkout. You can get more detailed instructions from my Google+ album, but it’s actually really easy to do!

at home couponsBelieve it or not, it gets even easier. You can do all this from your smartphone, too. Simply go to WeisMarkets.com from your phone and from there you can view the circular or sign into your account and “clip” coupons that will be added to your shoppers club card, just like you would do from the computer. Also check out their free app, from which you can create shopping lists and view the circular as well!

photoDuring my most recent Weis trip, I was on a mission to create a meal that was both healthy and tasty. The meal I finally settled on was something I’d never tried before – Chicken Fajita Sandwiches. (See recipe at the bottom of this entry.) I of course downloaded several eCoupons to my Weis Shopper’s Club Card before I left the house, which were automatically deducted from my total at checkout. It doesn’t get much easier than that!

The dish is healthy, but it’s also simple to make. The star of the meal are the veggies – specifically the red and green peppers – which Weis just happened to have on sale this week!

peppers 2To make the Chicken Fajita Sandwiches, you’ll need two chicken breasts (cut into strips), a red and green bell pepper, one onion, fajita seasoning, sour cream, shredded pepper jack cheese and, of course, buns.

chicken fajita sandwichesWhile the chicken is cooking, go ahead and chop up your veggies. The peppers are pretty easy to chop. The onions are a little trickier, but if you work quickly and you can squint while you chop, you should be okay!

chicken fajita sandwichesOnce the chicken is halfway done (about 10 minutes), add the vegetables and fajita seasoning and continue cooking until the veggies are soft.

chicken fajita sandwichesDinner time! After placing some of the chicken fajita mixture on a bun, top it with some two-percent cheddar or cheddar jack cheese and a dollop of low-fat or fat-free sour cream. As for sides, that’s up to you, but I served ours with a little Spanish rice and peas.

Ingredients
  • 2 Chicken Breasts
  • 1 Tbsp Olive Oil
  • 1 Green Pepper
  • 1 Red Pepper
  • 1 Onion
  • 2 Packets Fajita Seasoning
  • Shredded Cheddar Jack Cheese
  • Sour Cream
Directions
  1. Cut chicken, peppers and onion into one inch strips
  2. Heat olive oil in a pan over medium heat
  3. Add chicken and cook for about 10 minutes
  4. Add peppers, onions and fajita seasoning
  5. Cook for another 10 minutes, until chicken is no longer pink and vegetables are soft
  6. Place chicken and vegetables on bun and top with shredded cheese and sour cream

I think I would probably mix my own spices together instead of using fajita seasoning, and might opt for an open faced sandwich to half the bread calories, but I would try this one day. Too bad we don’t have a Weis Markets here. There is one where my mother lives, though–I[ll definitely be making a stop the next time I visit!

    Okay first off that recipe looks so YUMMY!! My family is having chicken enchiladas tonight but I’m really debating making this instead!
    Also I had no clue about all the benefits to shopping at weis I do have one in my area, but its about 35 minutes further then my local store. I always just went to the closer store, but after reading this article I think Weis may be worth the extra distance! Thank you for sharing 🙂

  19. I absolutely love the picture of the veggie area at Weis – all the colors are there to help you eat the rainbow and get the nutrients you need. That sandwich is amazing and I would skip the bread altogether, but my daughter would LOVE it as a sandwich. That means my gluten free son would be happy and my carb-a-holic daughter would be happy. Definitely using this one!
