hero With our daughter headed off to pre-school in a few weeks, my mornings are about to get a whole lot more hectic. Now, instead of running around, preparing breakfast, feeding the dog, and trying to figure out if I’ll have time for a shower, I’ll have to do all of that, but I’ll be doing it a lot earlier than I usually do. I’ll also have to put a lot more thought into preparing a wholesome, hearty breakfast for our little one. A breakfast that will help give her the energy and nutrition she needs for her day in class. (Not that I don’t think about that now, but you know what I mean.) After much research, shopping and trial breakfasts, I’ve decided that one of my go-to morning meals (for myself AND for her) will be El Monterey Breakfast Burritos. El Monterey Breakfast Burritos are a hearty and delicious option that are packed with real ingredients like eggs, cheese, and sausage all wrapped in a fresh-baked tortilla. I love them, my husband loves them, AND our daughter loves them. That’s what I call a breakfast win-win-win. IMG_4365 The El Monterrey burritos can be found the frozen foods aisle of your local grocery store and are available in three flavors: Egg, Sausage & Cheese, Jalepeno, Egg & Cheese, and Bacon & Egg. IMG_4358 My favorites are the jalapeno, egg and cheese burritos. With only 260 calories and a whopping 9 grams of protein, it’s a easy breakfast that can’t be beat! IMG_4360 What’s really nice about the burritos is how easy they are to prepare. Just pop a few of them in the microwave for 1 1/2 minutes, and they’re done! My daughter can’t get enough of the egg and bacon burritos, because you know, everything is better with bacon! And it’s easy enough for her to hold and eat, while I’m frantically looking for my keys, sunglasses – and where did I put my purse?! IMG_4375 And let me tell you, those extra minutes are a Godsend when it comes to my morning routine, and so much better than spending 10 or 15 minutes preparing other types of breakfast. What can you do with those 7-12 minutes while the microwave does its magic? That’s up to you, but here are a few things I’ve done with mine:

  • Put a braid in our little one’s hair after she decided against pigtails
  • Cleaned up spilled milk (and changed her shirt because she spilled milk on that, too)
  • Brushed my teeth after deciding the shower can wait until this evening
  • Let the dog out to go potty and filled up her food and water dishes
  • Poured a cup of coffee for myself and took two sips before setting it down to get ice cold
  • Turned the living room upside down while looking for my car keys
